ORIGINS: Cara Sur produce wines from 80 year old vines of Moscatel, Moscatel Negro, Bonarda Piedmontese, and Criolla Chica. The vines are Parral trained, a ceiling-trellised system that provides shade and maximizes airflow. The vineyard sits alongside the Los Patos River on stony soil at 1500 meters above sea level. The Cara Sur wines are made in a tiny winery next to Pancho and Nuria’s home where they produce small quantities with minimal intervention.

Join us for February’s wondrous sippin’ trip as we delight in the bottled
treasures!

Our enchanting first selection from Tokja, Hungary is 100% Furmint, a white
grape variety mainly grown in the Tokaj-Hegyalja region. This varietal
produces ravishing dry, crisp wines that are truly a gastronome's delight.

Next up is a stunning selection from Bordeaux, France where full-bodied red
wine blends tasting of dark fruit and spices, and dry white wines with
tropical fruit, and luscious sweet wines reign supreme.

ORIGINS: Lapis is an iconic vineyard in Tokaj. Located near the town of Bodrogkeresztúr and looking down onto the Bodrog River with the Várhegy (Castle Hill) volcano to the east. Despite being near to all of this moisture, Botrytis only hits certain parts of the vineyard. The 1 hectare that they farm is 155m up and in a breezy spot making dry wines more feasible. The soil is a mixture of rhyolite with strong brown clay soil and tufa.

We’re excited to ring in 2025 with irresistible selections from France whose diverse terroirs, rich heritage, strict quality standards maintain it’s position as a top-tier wine producer.

From the storied region of Provence, you’ll enjoy an exquisite rosé with a harmonious balance of elegance and complexity. Its aromatic profile bursts with bright pomelo, honeysuckle, wet roses, and a touch of dried potpourri. On the palate, expressive flavors of black currant and blackberries intertwine with subtle notes of orange peel. The finish is long and mineral-driven, making it a versatile wine for pairing. Perfectly suited to dishes like duck à l'orange, savory mushroom croustade, or lobster stew, this rosé is a celebration of sophistication and flavor.

The Loire Valley brings us a Cabernet Franc that’s robust yet refined red wine and beautifully highlights the pure expression of 100% Cabernet Franc. Its aromatic profile is rich with notes of fragrant leather, warming spice, and ripe brambleberry. On the palate, it delivers a brambly character with a graceful and velvety mouthfeel. Fruit-forward and boasting soft tannins, this wine is refreshingly low in alcohol, making it both approachable and versatile. Perfectly suited for pairing with hearty dishes, it shines alongside beef Bourguignon, slow-smoked portobellos, or a rustic lentil and potato salad.

ORIGINS: Throughout Terrebrune’s thirty hectares, beneath the layers of clay and earth, the blue, fissured, Trias limestone is silently at work. The soil here is healthy and full of nutrients, because he adheres to organic farming practices; to achieve the balance in the vineyards, he plows regularly. Gentle maritime breezes funnel air into the vineyards directly from the Mediterranean, cooling the grapes from the bright sun; another factor in safeguarding the freshness. This, in turn translates to wines for great long-term cellaring, including the rosé.

ORIGINS: Catherine and Pierre Breton are the real life bon vivants vignerons of lore. The Bretons farm eleven hectares of vines just east of Bourgueil in the village of Restigné. They produce Chinon and Bourgueil, as well as a bit of Vouvray, creating honest wines for both early consumption and longer aging. The Bretons first introduced biodynamic practices into their viticulture in 1994, just after receiving their organic certification in 1991.

Château de Rouanne is a historic estate with a 12th century medieval castle, situated on a classified Roman site located in the southern Rhône Valley. The name of the estate comes from "Rugius", which is said to be the name of the original Roman owner. The estate totals 177 acres (72 hectares), including 153 acres (62 hectares) of vines. Château de Rouanne was purchased by Louis Barruol, owner and winemaker of Château de Saint Cosme, in May of 2019.

Having studied habitat restoration and organic farming, Anna Espelt has always sought to bring her values in line with the farming practices at her family’s large estate of 200 hectares. She has also been pursuing something more personal – Pla de Gates Negre is a project focused on 25 hectares of vineyards collectively called Mas Marés located within the Cap de Creus Nature Reserve of Spain.

Montessu is named after the largest archaeological site in Sardinia, located near Agricola Punica’s second estate of Narcao within the Basso Sulcis region in southwest Sardinia. The Sulcis region is dominated by Carignano, an indigenous grape that is known for its elegant and velvety tannins. Carignano thrives in the local climate and well-exposed brown earth composed of calcareous clay and sandy soil.

While helping out at neighboring estates Giuseppe Maria “Giugi” Sesti observed that simplicity and careful attention were the most important factors in producing great wines while chemical intervention skewed their delicate balance; so he was determined to make entirely natural, biodynamically grown wines right from the start.

The wines that Jean-Philippe Fichet is making today have few rivals for their class in Burgundy and they could be unmatched in their transparency and expressiveness.

Fichet’s methods reflect his philosophy: he is famously meticulous and abhors taking short cuts. His low yields, the foremost key to quality, are achieved through severe winter pruning rather than by green harvesting. Viticulture and vinification aim to capture terroir, delineation and minerality in the wines. Jean-Philippe aims to know his vines and to work with them to find a healthy equilibrium. He eschews chemical fertilizers, herbicides or pesticides. Grapes are all harvested by hand.

At Borgogno, keeping things simple is their history: just a few, very clear rules:

In all the vineyards they own, they use just organic fertilizers with no herbicides, and carry out only eco-friendly treatments. This is why their grapes leave zero residue; clean grapes are essential to make high-quality wines.

In 2016 they began the conversion that led to organic certification for the 2019 harvest.

Nature itself teaches us how important it is to give time to time, without haste. This is what they do, in their vineyards and with their wines, since 1761.

Farming is a natural extension of winemaking for Steve Mattiason & Jill Klien Mattiason, They've both worked for many years in the sustainable agriculture and local food movement, and in 2003 they started Matthiasson Wines based on those values — purity, sense of place, respect, responsibility, deliciousness.

This small family winery is fiercely independent, no partners or investors, just the vision of Jill and Steve and a hard-working and passionate team. This independence allows them to farm organically, with no compromises in the winery or vineyard, creating the beautiful wines for which they are known.

Longaví is the personal project of two friends from different continents who came together in 2012 to produce wines together, Chilean Julio Bouchon and South African David Nieuwoudt. Longaví, meaning “snake´s head”, draws on the spirit and legends of two continents. The name derives from a stratovolcano called Nevado de Longaví, a perennially snowcapped peak of 3242m, situated in the Maule region in Chile.

For nearly two decades, Luis Seabra has been at the center of a cultural shift in Portuguese winemaking, leading a movement of young, independent winemakers making history by reclaiming historical vineyards, grape varieties, and techniques.

The storied history of Casa E. di Mirafiore goes back to 1878 when Emanuele Alberto Guerrieri, Count of Mirafiore, son of the first King of Italy, founded his estates in Barolo and Fontanafredda. A noble farmer-entrepreneur, he dedicated himself to wine with an absolutely modern approach. Through the years leading up to present era, Casa E. di Mirafiore publishes the first Sustainability Report (2020) and obtains the Sustainable Winery certifications from Equalitas, Vegan Product Certification and “Historic Brand” by the Italian Government that includes the most iconic Italian brands in the world.

Chateau Musar was founded in 1930 by Gaston Hochar. In 1959, after studying oenology at the University of Bordeaux, his son Serge became winemaker. The civil war that tore Lebanon apart from 1975 to 1990 did not defeat Chateau Musar; Serge refused to abandon the wine, and lost only the 1976 and 1984 vintages to the war. Musar's vineyards were certified organic in 2006, the first winery in Lebanon to do so. Most of the vineyards are located in the Bekaa Valley, between two parallel mountain ranges that stretch to Lebanon's Mediterranean coastline. Grapevines have been cultivated here for at least 6,000 years: the Phoenicians (the seafaring forerunners of modern Lebanon) introduced vines and wine from Byblos to all regions around the Mediterranean.

In 1971, the Club Trésors was founded in Champagne by 12 winegrowers who shared similar values looking to preserve and progress the notion of terroir-driven wines in the region. Since its inception, they have set the standard for grower produced Champagnes, making them some of the most sought-after wines from the region.

One of the current 29 members of the Club Trésors, Vincent Joudart’s vines and cellar are nestled in the western reaches of the prestigious Côte des Blancs region of Champagne. His neighbors include iconic producers such as Delamotte and Salon.

One of his 8 different cuvées is his Special Club bottling. Special Club wines require a litany of requirements by the Trésors; including panel tasting approval, a minimum of 3 years of aging, and can only be produced in exceptional vintages.

Unlike his neighbors that tend to produce wines made entirely of Chardonnay, Vincent’s Special Club bottling tends to lean a little more classic, blending 60% red grapes along with Chardonnay. This gives the wine amazing balance of silky texture, beautiful citrus and orchard fruit, and that classic toasty biscuit quality found in great Champagne. Enjoy now through 2027.

This Cuvée is a blend of 40% Chardonnay, 40% Meunier, 20% Pinot Noir and has a minimal dosage of 5.5g/L.

Nowhere in the world of wine does family lineage mean more than in Burgundy. Due to regulations about land that were handed out by none other than Napoleon himself, one will often see family names continue generation after generation. Caroline Morey is no exception.

Her father was the famed Jean-Marc Morey of Chassagne-Montrachet, and being an intrigued young Burgundian, she took her to father’s cellar directly after high-school; learning the craft and techniques that served her father well. It was years later that she married into another iconic family, the Colin’s. In 2001, she and her new husband Pierre-Yves (the son of Marc Colin) started their own cellar, employing the craft that they had learned from their fathers.

Fast-forward 20 years, and Caroline has made a name for herself making some of the most chiseled, textured and nuanced wines from the village of Chassagne. The 2021 vintage brought many challenges to growers; limiting the quantities they produce and elevating the quality to one of the most sought-after white wine vintages in years.

The history of Viognier dates to the 18th century with it originating in the Northern Rhone Valley of France. It grew in popularity for the next 100 years, being consumed in top restaurants and bistros of Paris. However, due its difficulty to grow and a decrease in popularity, it was almost extinct in the 1960’s, with only eight acres still under vine. Thanks to a group of producers in the famed village of Condrieu, it has seen a renaissance amongst growers around the world.

Made in minuscule amounts, La Doriane is the pinnacle of Viognier. With tiny yields, meticulous farming and using only the best French oak barrels, one will not find a more profound, contemplative example of this grape variety. The 2022 is perfumed with white flowers, apricot, white peach and vanilla bean. The palate is powerful, yet refined, displaying stone fruit, citrus and a round, rich texture complimented by an ethereal freshness. Enjoy this wine now through 2034 with scrambled eggs and freshly shaved truffles.

The story of La Jota and Howell Mountain begins in the mid-1800’s, when it was founded as Rancho La Jota by George Yount. However, it wasn’t until 1870 that people began to discover this mountainous, forested land when Edwin Angwin opened a “health retreat” on the land that is now the city of Angwin.

For more than a century, Penfolds has carried the torch for the South Australian wine industry. While constantly innovating, they also are keenly adept at recognizing tradition. No other wine they produce exemplifies this tradition than St. Henri Shiraz.

The lore behind the name likely comes from the son of the original winemaker, Léon Mazure, circa 1888. After World War I, the wine disappeared from their cellars until its revival in 1953, when then winemaker Max Shubert wanted a classically styled wine to compliment his new wine, Grange. Keeping history and tradition in mind, St. Henri is set apart in that is aged entirely in neutral oak, allowing the wine to express place more than winemaking.

Though their marketing teams have tried to change the composition of the wine over time, the winemakers have remained steadfast in keeping its traditional style, thus, making this wine singularly expressive.

Some have considered the 2018 St. Henri the best vintage since 1986; combining profound intensity and concentration with a refined, energetic and silky texture. The complexity is immense with notes of blackberry, plum, tobacco, new leather, chocolate, scorched earth and fresh herbs. The tannins are fine grained and suggest a wine that will age for decades. Enjoy 2018 through 2058 and pair with braised short ribs, herb-roasted potatoes and red wine reduction.

As you make the two-hour drive south from Florence you will meander through hillsides, vineyards and olive groves, and arrive in the ancient village of Montalcino, home to the most important terroir for Sangiovese. It is here that you will find 13th century castles, centuries-old cellars and rows and rows of vines that will go into the noble Brunello di Montalcino wines.

Brunello (local dialect for Sangiovese) di Montalcino wines are singular from other regions in Tuscany for their power, complexity, ageability and strict regulations. The wines must be 100% Sangiovese Grosso (Brunello) and aged for a minimum of four years (five for Riserva). The soils are laden with clay, limestone and marl, adding to the complexity, minerality and tannin development.

Col d’Orcia is one of the oldest estates in Montalcino and the largest certified organic vineyard. Located in the southern reaches of the village, Col d’Orcia does not experience some of the adverse climactic conditions as other areas, allowing the grapes to ripen slowly and fully. Amongst their sprawling vineyards lies the single site known as Poggio al Vento. This single vineyard is so special that they bottle it separately and designate it as a Riserva, giving another year of aging before release.

In the village of Pouilly, in the middle of the Pouilly-Fuissé AOC lies Domaine du Roc des Boutires. The winery’s name draws on both terroir and tradition: its proximity with the Roche de Solutré, an emblem of the appellation and a testament to the extraordinary geologic richness of this vineyard; as well as the Domaine’s settlement in the very heart of one of the best terroirs of the appellation – “Aux Bouthières.” In the ancient French vocabulary, a “boutière” was a secondary road that mule skinners used for the transportation of oils and wines in remote parts of the country. The vineyard of Domaine du Roc des Boutires is only 5 kilometers (3.12 miles) west of the ancient Roman track, on a very small road that now leads to the village of Solutré, the hills of the Mâconnais and the plains of the Charolais.

This Chardonnay is sourced from the commune of Leynes, from the terroirs on the northern slope of the commune of Solutré, harvested from 30 year old vines. 95% of the fermented juice is aged in stainless steel tanks and 5% in oak barrels.

While working on establishing Terroir al Limit, Dominik Huber became entranced with the Priorat’s history – its rhythms of life, the simple cuisine, and the honest wines that honored their origins. When walking past the crumbling Sindicat Agricola in Torroja, he could recall those few bottles of Priorat he had tasted from vintages in the 1970s, and he envisioned a future where such wines could again be made.

Rather than focusing on individual parcels, the Garnatxa, and Carinyena are sourced from many different vineyards throughout the region. The wine ferments and ages in concrete tanks. Bottled 6 months after the harvest, they are meant to be drunk young.

In the fog-laden hills of Piemonte in Northwest Italy lies the region of Monferrato. This area is known for some of the most iconic grape varieties in Italy, including Nebbiolo and Barbera. While these wines are notorious around the world, there are indigenous grapes to be discovered. Enter, Grignolino. With the first documented plantings in the 13th century, Grignolino is still sparsely grown outside this region. It is known for having an unusually high amount of pips in the grapes, which help contribute to its higher-than-expected level of tannins given the pale, almost rosé-like color. Fermented and aged in stainless steel, this wine is medium in body, with fruit-forward notes of cranberry, wild strawberries, tart plum, roses and white pepper. Chill it and enjoy with cured meats, veggie-heavy pastas or Thanksgiving dinner!

In 1993, Hervé Souhaut founded Domaine Romaneaux-Destezet with 5 hectares (about 12 acres) of 50 - 100-year-old vines 30 minutes west of the famed region of Hermitage. He produces fresh-styled, low-intervention wines based on grapes known for this part of France; Gamay, Syrah, Viognier & Marsanne. The La Souteronne Gamay comes from 50 – 80-year-old vines from eight organically farmed vineyards and employs an old school approach to winemaking. After hand harvesting, the grape clusters are fermented at cool temperatures without destemming. Once fermented, it is aged in stainless steel and used oak barrels. The finished product is unfined and unfiltered, with minimal sulphur; resulting in a wine of beautiful freshness and a silky texture. There is a sublime combination of nuances found in famous nearby regions, Gamay from Beaujolais & Syrah from Hermitage. You will find fresh strawberry, black cherry, and fresh herbs intertwined with a smoky, bacon fat characteristic. Put a slight chill on this wine and serve with roasted chicken, sautéed morel mushrooms, and fresh garden herbs.
